The best new food of 2009 is Pamelas Baking & Pancake Mix. You see, a few years back I found out I was allergic to gluten. What a blow! I love french bread, pastries, cupcakes and pancakes. Not to mention, I’m a baker! What’s a grilled cheese sandwich without a crusty toast? A breakfast burrito without a soft flour tortilla? A donut without fluff and air?
Now, I’m not naming names but a few years ago the few gluten free options were totally disgusting. You see, when you bite into a beautifully baked good, it’s supposed to have a wonderful texture and delicate density. My first GF (that’s celiac lingo for gluten free) sandwich bread did not have that satisfying bite. In fact, the more I chewed, the more it expanded. Bread is not supposed to GROW in your mouth.
Needless to say, the hunt for tasty and satisfying GF baked goods has been a trek. Thankfully, there are plenty more options out there to choose from that are yummy and one of them happens to be Pamelas Baking & Pancake Mix. It’s made with almond meal and brown and white rice flours. When I add a little vanilla, cinnamon, fresh Oregon blueberries, butter and maple syrup…I forget that I have to follow a strict GF diet. It’s a real treat!
Wow! I need to try this stuff! My son is on the autistic spectrum and I have been told gluten free may help him, but I have always had the “too hard” belief. This just may start to convince me… I’m going to look for a local source.
